Commencing with an initial research stage to fully understand the context of the market and its operating environment, including that of the local community. Protein built out a series of initiatives together with the Brixton Village team and local community, the first being the Brixton Kitchen.
Brixton Kitchen launched as a London wide competition that invited local restaurants, cooks and chefs to battle it out for their very own restaurant space in the market, judged and supported by big name chefs and food industry leaders.

Protein working alongside Brixton Village, created a bespoke competition kitchen and workshop space to seed interest. Bold and impactful, the space hosted an initial Q&A that exceeded all expectations, welcoming hundreds of budding cooks, chefs and business owners from in and around the local area and across London, all interested in applying to be the next top chef at the market and win a restaurant space.

Featuring Jackson Boxer, Great British menu winner James Cochran and Claire Ptak from Violet cakes. The competition commenced with an initial judging round based on application submitted via the website. Shortlisted applicants then participated in a series of live knock-out competition rounds, with contestants presenting their wares to our panel of judges and experts to be crowned the winner of Brixton Kitchen.
Two winners from the local community were crowned, receiving mentorship and support from our panel of experts and industry leaders, as well as the coveted restaurant space and food stall plot at the market respectively.
The overall winner Budgie Montoya completed his move into the space in 2019. SARAP - is a neighbourhood Filipino bistro serving modern interpretations of dishes inspired by the food and lechon houses of the Philippines.
